Ice Cold Coffee
Hot weather is approaching! Well, technically it’s still spring but I’m already dreading the 100 degree temps that summer brings *crossing fingers the A/C does not stop working*
A hot day won’t be stopping me from enjoying an afternoon pick me up though. Caffeine is gold when I’m running on only a few hours of sleep… or the fact that I just LOVE the taste of coffee. Question: how many Mommas out there who by the end of the day have opened their microwave only to find the cup of coffee they’ve been looking for?! Or your husband found it? I know the feeling. With ice cold coffee, the microwave is one place less to find your beloved caffeine 😉
Tips: I’ve always made my ice coffee with my homemade cold brew concentrate but feel free to use any coffee you want. If you don’t want your coffee drink to be further diluted as the ice melts, you can freeze some cold brew concentrate in ice trays. That way you can have a mix of coffee concentrate and regular ice cubes to keep your drink cold. This recipe only uses a few ingredients, no added sugar needed since the creamer is already sweetened. You can spice it up with a sprinkle of cinnamon or nutmeg, mint, vanilla extract, or sea salt… or all of the above if you want to go crazy with it. I haven’t tried all of that in one cup but hey!—the world is your coffee. Fill it up however it will make you happy ❤️
As for the creamer, you can explore with a coconut or almond base, cashew cream, milk, or just your classic half & half. If you want to add caramel syrup, then by all means you deserve it. However, if you have to watch your blood sugar, your favorite stevia brand, yacon syrup, or monk fruit extract are great alternatives. Just make sure you start with a small amount and adjust accordingly to your taste preference. This is because yacon syrup and sugar alcohols found in some stevia products may cause upset stomach. As always, please consult with your physician before trying anything new.
Ingredients (Makes 1 serving)
1/3 cup of cold brew concentrate. Alternative: 1 cup regular coffee at room temperature.
1/2 cup water. *Only if using cold brew concentrate.
1 cup ice cubes
1/3 cup creamer of your choice (I personally love sweet cream flavor)
Optional flavor enhancers: cinnamon, nutmeg, mint, vanilla extract, or sea salt.
***Adjust the coffee and creamer amount to your taste preference. These amounts are based on using the concentration of my homemade cold brew coffee.***
Directions
In a glass, add the following in order: ice cubes, water (if using cold brew), coffee concentrate, then creamer last to watch that beauty swirl into perfection.
Stir and enjoy!
